What is PTFE, Teflon and PFOA?

To make terms easier to understand, we have defined PTFE, Teflon, and PFOA.

PolyteTraFluorEthylen or PTFE is carbon and fluorine-based synthetic compound. It’s solid that has the texture and feel of wax. We know it for its smooth, slippery surface as well as its resistance to corrosion and high heat (1).

PTFE is best known for its commercial use in the coatings of non stick pans as well as other cookware.

Manufacturers also use it in industrial products such as bearings, pipeliners, valves, and pumps.

It even has medical uses. Its slippery surface makes it ideal as a dry lubricant for medical devices. It’s also used to create grafts in surgeries and as a coating for catheters.

First and foremost, you should know that Teflon is actually PTFE. Teflon is just a trademark name.

Patented in 1945 by Kinetic Chemicals, a DuPont company, chemist Roy J. Plunkett discovered the chemical compound in 1938.

PFOA, also known as C8, is perfluorooctanoic acid. It is a synthetic chemical that is not Teflon or PTFE (2).

It was, however, an ingredient used to make Teflon, hence the confusion. But it burned away during the processing.

Why Are People Considering Teflon as Harmful?

You probably have heard about Teflon’s bad reputation when it comes to human health. While Teflon and PTFE are one and the same, we often confuse PTFE with PFOA. However, PFOA is a much bigger concern.

The International Agency for Research on Cancer (IARC), an arm of the World Health Organization (WHO), first brought PFOA concerns to light. It deemed PFOA a “possible” carcinogen, meaning it has the potential to cause cancer in humans (3).

However, the Scientific Advisory Board of the U.S. Environmental Protection Agency (EPA) arrived at a different conclusion.

After examining evidence from studies, the EPA announced that PFOA can’t officially be classified as a carcinogen in humans.

Other studies have found that it stays in the environment and the human body for a long time. But, the U.S. Food and Drug Administration confirms there is no significant health risk in using non-stick cookware made with PFOA (4).

Even though it is considered safe by the FDA, PFOA is no longer manufactured by US companies. In cooperations with the EPA, US manufacturers worked from 2006 to 2015 to eliminate PFOA in emissions and in products.

However, be aware that PFAO is still manufactured in other countries.

So these days, you won’t find PFOA in Teflon. Or at least, you may find it in trace amounts.

There are, however, still health risks associated with high heat. Teflon coatings can break down at temperatures of 570 degrees Fahrenheit or higher.

This breakdown can release chemical fumes that cause a polymer fume fever often referred to as Teflon flu (5).

Types of Non Stick Pans Without Teflon

There are several alternative non stick coatings to Teflon. Let’s look at the five options we could find.

Ceramic Coating

GreenPan Lima Healthy Ceramic Nonstick, Frying Pan/Skillet with Lid, 12', Gray

Ceramic is a popular non-stick coating. But don’t get fooled by its misleading name.

This coating is actually NOT ceramic. Instead, it’s a metal base combined with a thin layer of a “ceramic-like” substance called Sol-gel (6).

The metal base can be metals like anodized aluminum, stainless steel, or cast iron. They give the coating strength. On the other hand, the “ceramic layer” provides the non-stick properties.

Plus, when you think ceramic, you probably think natural. But again, that’s a misconception. The Sol-gel is a compound of silica (sand) and other synthetic chemicals (7).

Sometimes, ceramic coating is associated with other materials such as titanium, copper, granite, or diamonds. In these cases, we speak of granite coating or titanium, diamond, and copper-infused ceramic coating.

While titanium is real particles infused in the ceramic, diamond, granite and copper are just colors or styles – not real material alloys.

  • Easy to clean

  • More lightweight than cast iron or stainless steel

  • Loses its non stick properties more quickly than Teflon

  • More expensive than teflon

Porcelain Enamel Coating

CSK 4 Quart Cast-Iron Round Casserole Cookware with Lid-Heavy Duty Braiser Pan with Porcelain-Enameled Non-Stick Surface, Stainless Steel Knob, PFOA&APEO Free, Cast Iron Casserole Dish, Card Blue.

Porcelain enamel coating is another popular alternative to Teflon. The porcelain enamel process, known as “vitreous enameling”, fuses glass and metal to create a coating.

This coating is used for cookware, but not only. Bathtubs, refrigerators, chemicals, food tanks, and equipment for meat markets all have porcelain coating. The coating is ideal for these uses because it resists corrosion (8).

Porcelain enamel is most often used in coating cast iron cookware to keep cast iron advantages while providing it a smooth exterior surface.

  • Scratch-resistant

  • Resistant to acidic

  • Not dishwasher safe

Honeycomb Coating

HexClad Hybrid Cookware 12 Inch Stainless Steel Frying Pan with Stay-Cool Handle - PFOA Free, Dishwasher and Oven Safe, Non Stick, Works with Induction Cooktop, Gas, Ceramic, and Electric Stove

Honeycomb non stick coating is a relatively new type of surface. A laser-etching process creates a honeycomb pattern that allows the stainless steel and non stick properties to work together.

So you get the benefits of cooking with stainless steel while having optimal non stick capabilities.

  • Easy to clean

  • Oven safe

  • Combined with stainless steel makes it heavy

Seasoning your non stick pan without Teflon isn’t simply a way to make food taste great. It’s a practice that will keep your cookware non stick cooking surface working efficiently.

We often associate seasoning with cast iron pan cooking. Using this process prevents the iron from rusting.

But seasoning is also beneficial for carbon steel, stainless steel, and cast aluminum. For all surfaces, it improves the non-stick quality.

To season, you need to coat the surface with a layer of animal fat, such as butter or vegetable oil. Then cook the oil into the pan.

  • It prevents rust

  • It stops metallic food tasting

  • You need to season regularly

There are many factors to consider in determining which material you prefer in a non stick pan without Teflon.

If you are looking for optimal heat conduction, then aluminum might be your choice. If you have an induction cooktop, you might opt for cast iron, carbon steel, or compatible stainless steel.

Dishwasher icon

Dishwasher Safe

Most cookware are dishwasher safe. You should refer to the manufacturer’s manual if a dishwasher-safe non stick pan without Teflon is what you are looking for.

Note that not all of the pans on our list are dishwasher safe. For example, the CSK pan and the GreenPan stand out as pans that should only be hand washed.

However, you should favor the handwashing method of cleaning for all your non stick pans. You could use a non-lemon soap for example.

Simply keep in mind that dishwasher cleaning over time can scratch cookware.

Compatibility icon

That’s simple, all types of non stick pans without Teflon are compatible with most heat sources. The only exception is if you’re cooking with induction cooktops.

Not all the pans on our list work for induction cooking. Some pan types like enamel-coated are better suited for glass cooktops because they won’t scratch the surface.

You should also consider oven use as you make your choice. All coatings on this list have high heat points. Always follow the manufacturer’s recommendations.

After our extensive review, here are answers to a couple more questions you might have.

scratch icon

Is scratched Teflon dangerous?

No, scratched teflon isn’t dangerous. No more than any other type of coating. But it’s only natural to have this question.

For years, the thought was that scratched Teflon pans might not be safe to cook with.

The IARC, which monitors global cancer occurrence and identifies causes of cancer, says there is no health risk (13).

The only drawback is that scratched Teflon will lose its efficiency as non stick cookware.

duration icon

When Should I Replace Nonstick Pans?

The lifespan of a non stick pan without Teflon is dependent on your usage and care. Frequent use can wear the pans quicker.

But if you follow the manufacturer’s recommendations for care, then you can extend the life.
