The Drawbacks of Choosing a Cast Iron Skillet

Let’s take a look at the downsides of using cast iron.

It’s Not Dishwasher Safe


As easy as it would be to put a pan in the dishwasher, this is not recommended for cast iron.

It will ruin the seasoning on your skillet which is crucial for keeping it nonstick. And the long exposure to water will also make it more likely for rust to form.

Some enameled cast iron can go in the dishwasher. But generally, it’s best to stick to handwashing.

It’s Porous


When you heat a cast iron skillet, it gets porous. This means it will absorb the flavors of the food you’re cooking.

So if you’ve got a nice large 12 inch cast iron pan that you love to use for baking bread and whipping up a fish stew, you might want to leave a bit of time between these. Otherwise, you could find your bread takes on a bit of a different taste than you expected!

It could be worth having a range of pans to stop this from happening.

It’s Heavy


Whilst cast iron itself isn’t necessarily heavier than other metals, cookware made from it tends to be thicker and therefore weightier.

The large vintage cast iron pieces are definitely not for the faint-hearted! A helper handle will make it easier to use but it’s still going to be heavier than other cookware.

It’s Not Resistant to Rust


If you leave your cast iron frying pan to soak for a while you may find it’s started to rust already.

If you’re using plain cast iron then it’s important to keep up with your seasoning to prevent rust. If you don’t want to spend the time on this then enameled cast iron is more resistant to rust without needing to be seasoned.

If you’ve left your pan for too long, or have been given some vintage cast iron that is looking rusty, then fear not. You can get it back to good condition with some simple scrubbing(10).

It’s Reactive


Cast iron is a reactive metal(11). Your pans will react with acidic foods, like citrus and tomatoes, and can take on the flavors so your food won’t taste as expected.

But this doesn’t mean you can’t cook with these kinds of ingredients. Just be careful with how you cook, and how long you cook acidic foods for(12).

If you opt for seasoned cast iron, make sure you keep up with the seasoning to protect from any damage. Enameled cast iron won’t react in the same way due to the coating.

It Reacts Slowly to Temperature Changes


Cast iron skillets are slower than other types to heat up and cool down because it’s generally quite thick.

If you need fast and precise temperature control then it may be tricky to achieve this with cast iron.

To preheat your pan properly, you should leave it on medium heat for around 10 minutes. If you put it on too high a heat it can suffer thermal shock, which can cause your pan to warp or crack(13).

What Should You Not Cook in a Cast Iron Pan?

We suggest not trying anything delicate, like eggs, until you’ve used your pan a few times and built up the seasoning.

There are some other foods to try and avoid to help keep your skillet in good condition. Acidic foods, like tomatoes, citrus, and vinegar, can damage even well-seasoned cast iron pans. You may find the seasoning flakes off into your meal(14).

Your pan will also absorb odors, so anything with a strong taste will linger. It’s probably best to avoid making desserts in your skillet if you’ve just made a steak!
